here's the recipe for this delicious cake: (haven't baked it yet, but will be!)
banana & chocolate chip cake
6 oz/170g unsalted butter
8 oz/225g granulated sugar
2 large ripe bananas(8oz/225g)
? tsp vanilla essence
10 oz/280g self raising flour
? tsp salt
? tsp bicarbonate of soda
2 oz/60g milk or dark chocolate chips
1 rounded tbsp plain flour
1 rounded tbsp demerara sugar
Knob of unsalted butter
1. Preheat oven to 160C.
2. Grease and line an 8 in/20cm round or loaf tin.
3. Melt butter and sugar over low heat.
4. Mash bananas with vanilla essence.
5. Sift flour, salt, bi-carb and add to butter mix with eggs, then add bananas mix well, stir in chocolate chips, do not over mix.
6. Pour mixture into prepared tin.
7. Mix together crumble mix until it resembles breadcrumbs, scatter over the top of the cake.
8. Bake in centre of oven for 1h 30m - 1h 45m, check by pushing wooden kebab stick into cake, which should come out clean. Leave in tin until cooled, then remove.
Chocolate Peanut Lover's Crunch
This is my own creation. I just made them tonight. Please be kind. LOL.
This makes a crunchy cookie. A nice combination of sweet and salty.
1c Almond Flour
1 tsp baking soda
1/2 c no sugar chocolate/carob chips (I used no sugar chocolate chips)
1/2 c roasted salted peanuts, chopped
1c peanut butter (I find smooth works best)
1 tblsp vanilla
1/3 cup liquid sweetener (I used sugar twin)
1. Preheat oven to 350
2. Using an electric beater, cream together wet ingredients until very smooth.
3. Mix together dry ingredients.
4. Add dry ingredients to wet and mix well.
5. You want your batter thick, but still sticky/very moist. (almost looked oily)
6. Drop by spoonfulls onto an ungreased cookie sheet.
7. Bake for about 15 mins. You do not want to over bake. These do not get golden.
8. Cool and serve. These were actually pretty tasty, especially for a low-carb cookie. I think I would try these again, Low-Carbing it or not.
